Water Activity Measurement In 5 Minutes
The water activity (aw) is therelative humidity which is reached at equilibrium in a sealed container in which a hygroscopic product has been placed.
The term "water activity" describes the same physical state as does the term "equilibrium relative humidity" or "ERH" The water activity plays an important role for quality considerations such as product stability, storage ability (enzymatic and microbiological stability, aroma preservation), handling properties, physical characteristics or chemical stability
